Steaks Simply

If you're craving steaks on a weeknight this is the recipe for you. No need to wait for the weekend to indulge in this decadent meal. It's super simple and easy and ready in 25 minutes or less.


Yield: 2 - 6oz portions

Difficulty Level: Easy

Prep Time: 10 minutes

Cooking Time: approx. 12-15 minutes


Ingredients

2 - 6oz fillet mignon steaks

Salt and pepper to taste

1 tablespoon extra virgin olive oil

1-2 tablespoons non-dairy butter

2-3 garlic cloves, peeled and halved

5-6 sprigs of fresh thyme (rosemary also works great)

1/2 onion, sliced

1 cup portabella mushrooms, sliced


Instructions

  1. Pre-heat oven to 400F. Heat a cast iron pan on medium-high to high.

  2. Pat dry steaks on both sides with paper towel. Spread a little of the olive oil, sprinkle with salt and pepper, and rub the meat for even seasoning. Turn the steak and repeat.

  3. Place the steak in the hot pan and sear 2-3 minutes. Turn the steak and sear the other side 1-2 minutes. Reduce heat to medium and add the garlic, thyme sprigs, butter, onions, and cook a 1-2 minutes, spooning the melted butter over the steaks. Add the mushrooms and cook another 1-2 minutes, mixing all ingredients to ensure it's covered with butter.

  4. Place the pan into the oven and cook 2-3 minutes. Remove pan from oven and allow meat to rest 3-5 minutes before serving.




Tips:

  1. Bring steaks to room temperature or at minimum 20 minutes before cooking.

  2. If the steak has a little fat on it you can add less butter; if it doesn't have fat and is a rather lean cut then add more butter. The added fat will add to the tenderness and flavor of the meat.

  3. Meat cooking times and temperatures:

    • Rare (Cool red center) 125° F

    • Medium-Rare (Warm red center) 130-135° F

    • Medium (Rosy pink center) 140-145° F

    • Medium-Well (Slightly pink center) 150-155° F

    • Well (Brown center) 160° F
