Lemon Garlic Chicken

This recipe is a weeknight indulgence. It's so tasty and refreshing with fresh lemon and garlic with the added herb for another layer of flavor, and yet so quick and easy.

I love serving this with steamed broccoli and quinoa for a completely satisfying and healthy meal.

Yield: Serves 4

Prep Time: 10-15 minutes

Cooking Time: 30 minutes


Ingredients

1 pound chicken breast, cut through horizontally to thin it out

1 teaspoons salt

1/2 teaspoon black pepper

2 tablespoon olive oil for cooking


Marinade

1 1/2 lemons, zest and juice

2 tablespoons olive oil

2 garlic cloves, grated

1 1/12 teaspoons dried oregano

1 teaspoon red pepper flakes


Garnish

1/2 medium onions, diced

1 tablespoon olive oil

1 tablespoon non-dairy butter

1/2 cup chicken stock

2 tablespoons fresh cilantro, chopped


Instructions

Lay out chicken on a chopping board and thin out with meat tenderizer (optional) and season both sides with salt and pepper.

Add all marinade ingredients to a large bowl, mix until all blended and add chicken, ensuring all pieces are immersed in the marinade and set aside while you work on the onions.


Heat a large skillet on medium to medium-high, add the olive oil and non-dairy butter and let it heat thru by gently mixing the two together, about 15-20 seconds. Add the onions and sauté until starting to very lightly brown. Add the chicken stock and let it come to a slight boil then mix in the cilantro, stir together and turn off heat. Transfer mixture to a bowl and set aside.



Heat the same skillet on medium high and add 1 tablespoon olive oil as needed. Add chicken pieces without crowding the pan. Cook about 3-4 minutes on first side, flip and cook the other side about 2-3 minutes or until internal temperature has reached 160F. Transfer to a plate and cover lightly with foil to keep from drying.



Add 1 tablespoon of olive oil as needed to skillet and repeat the process until all chicken is cooked. Before serving pour the stock and the onion herb and butter mixture over the chicken.
