Sometimes, you just want a non-meat dish. This No Meat Mondays-inspired chickpea coconut curry dish is a way to have a protein-rich meal that's plant-based, deliciously creamy, and rich in flavor.


A super easy dish to put together that can be served over white rice, with a naan, or even eaten as a bowl of soup.
