BBB - Black Bean Burger

Want a meatless dinner option that isn't boring? Here is a simple, yet a healthy recipe that I came up with that not only was satisfying ( as per my family's feedback ), but also helped me to use up any produce items sitting in the fridge before they went bad! I just had to jot down the recipe to share with you all!

Yield: 7-8 burger patties

Difficulty Level: Easy

Prep Time: 10-15 minutes

Cooking Time: 15-20 minutes


Ingredients

2 cups *black beans or 1 15oz cans of black beans

1 cup spinach, chopped small

1 cup kale, chopped small

1 medium onion, chopped small

1/2 cup corn, fresh or *frozen

6-7 fresh curry leaves

2 teaspoon turmeric, grated

1 teaspoon garlic, grated

1 teaspoon ginger, grated

1 teaspoon salt

1/2 teaspoon black pepper

2/3 cups liquid eggwhite

1 cup gluten-free panko breadcrumbs

2-4 tablespoons of oil for shallow frying


Instructions

Wash and rinse the beans in a colander, removing all liquid. Place beans in a large bowl and mash with a potato masher so they become a paste like consistently, leaving about half the beans un-mashed. Add all ingredients except the oil, and combine well.



Using a half cup measuring cup form equal size patties and place on plate as you work through the mixture.

Heat half the oil on medium high in a large non-stick frying pan.

Place four patties in the pan, cooking about 3-4 minutes, before flipping and cooking the other side for another 2-3 minutes. Remove and place on plate. Heat remaining oil, repeat the process and cook the remaining patties.


Serve alongside a soup or salad or just dipping sauce of your choice.



* Tips

Beans: Wash and rinse raw black beans and soak overnight. After soaking period wash beans of soaking water and cook as follows:

Instant Pot Pressure Cooker: Add beans and enough fresh water so that it is at least 2-3 inches above beans. Pressure cook for 30-35 minutes.

Stovetop: In a medium to large saucepan add beans and enough fresh water so that it is at least 4-5 inches above beans. Cook on medium - medium high for about 45-60 minutes, or until beans are tender and cooked through

Frozen corn: Ensure it is thawed out completely and removed of any water before adding to recipe.
