Baked Zucchini Fritters

These flavorful crowd pleaser zucchini fritters are baked rather than fried, making them healthier and without compromising taste.
Packed with flavor with just a few ingredients, they are not only easy to make but are delicious, low-carb, gluten and dairy free!
These can be deep fried or even shallow fried if you're watching your fat intake. Try my cabbage fritters as an alternative vegetable.
Zucchini is naturally hydrating and doesn't require additional liquid in this recipe. You can also squeeze all the liquid out in and set it aside. This then allows you to control the amount of zucchini liquid you want to add back. In this recipe i was able to extract just under half cup of zucchini water with 2 medium zucchini!
