Baked Lemon Garlic Chicken Drumsticks

This is a very easy and tasty weeknight meal that is best prepared ahead by marinating overnight. A delicious blend of lemon, garlic, and rosemary packs in a lot of flavor. The golden brown color and the ‘stickiness’ the marinade provides after the chicken is cooked will leave you licking your fingers. Serve with a yogurt dip and sides of your choosing. I generally serve this with couscous and steamed broccoli.


Yield: 3 pounds of drumsticks, approx. 15 drumsticks

Difficulty Level: Low

Prep Time: 10-15 minutes

Marination: 30 mins to 24 hours

Cooking Time: 35-40 minutes


Ingredients:

3 pounds chicken drumsticks, skin on and patted dry

2 lemons, zest, and juice of

2 garlic cloves, roughly chopped

1 medium onion, roughly chopped

5 sprigs fresh rosemary

¼ cup EVOO

1 ½ teaspoons salt

½ teaspoon ground black pepper


Instructions:

Combine all ingredients together in a Ziplock bag, mix well so all ingredients and blended well and drumsticks are coated. Marinade in refrigerator overnight for best results. Remove 30 minutes prior to cooking.


Heat oven at 450F and bake for 30 minutes. Flip one time and back another 3-5 minutes.

Remove from oven and very lightly cover with foil or parchment paper so steam does not build. Let it sit approx. 10 minutes before serving.
