Air Fryer Shrimp Fajitas

I've been obsessed with my Air Fryer ever since i purchased it not too long ago!
I've been cooking up all sorts of proteins, vegetables and even baking cakes in it!
My Shrimp Fajitas are no exception. It's super quick and easy and there's no mess, hence no fuss with cleaning afterwards.
Serve on corn tortilla to make it gluten-free. Add chopped jalapeño peppers and a squeeze of lime juice.

Yield: Serves 2-4
Difficulty Level: Easy
Prep Time: 10 minutes
Marinate (optional): 30 mins to overnight.
Cooking Time: 10 minutes
Ingredients
1 pound raw jumbo shrimp, shelled and deveined
1 large bell pepper (any color), sliced lengthwise
1 large red onion, sliced lengthwise
2 tablespoons my homemade fajita seasoning
2 tablespoons olive oil
Instructions
Combine all ingredients in a gallon zip lock bag, seal the bag and massage till all the ingredients have combined. Place the bag on a plate and refrigerate for 30 minutes. If you have the time then overnight marination is optimal.
Remove from refrigerator and place on counter 20 minutes before cooking.
Line Air Fryer tray with paper liner. Empty the contents into the tray and mix together.
Set Air Fryer setting at 375F and cook for 10 minutes.
I found this was the optimal temperature and time to cook the shrimp, keeping it moist and tender, while also allowing the peppers to charr but remain a bit crunchy!
